Red, White Fish Chowder
32 oz can of Campbell’s creamy tomato soup
28 oz can of diced tomatoes
1/2 medium sweet white onion
2 bunches scallions
2 lbs white fish or chowder fish
1 bunch fresh cilantro
3 – 4 cloves of garlic
1 cup Orzo pasta
½ teaspoon course black pepper
1/4 teaspoon rosemary
sea salt

Cut fish into 1 inch cubes.
Season with pepper and sea salt.
Set aside until ready to be added to soup
Dice onions
Chop scallions, onion and cilantro.
Finely chop Garlic. Cook Pasta separately and set aside.
Combine all ingredients (except fish and pasta) in pot and let cook for 30 – 45 minutes.
Add fish and Pasta and simmer for another 10 -15 minutes or until fish is flakey.
Serves 4-6
