Chili
New and Improved
1 lb Pork
1 lb Chicken Breasts
2 lbs Stew Beef
2 Chorizo Sausage (remove skin)
3 Large Onions
2 28oz Cans of Diced Tomatoes
4 Garlic Cloves
1 14oz Can Chicken Broth
12 oz Can of Beer
4 Poblano Peppers (grilled, peeled and diced)
2 tbs Olive Oil
1 tbs Sea Salt
1 tbs Black Pepper
1 tbs Ground Cumin.
1 tbs Crushed Red Chili Pepper
1 tbs Chipotle Hot Sauce (or 1 smoked Ancho Pepper)
1 Bunch Cilantro
Cut meats into 1 1/2 to 2 inch cubes
Dice onions
Chop Garlic
Cut the tops off Cilantro and chop
In large pot, heat olive oil and brown Chorizo, Pork, Chicken and Beef.
Add Garlic and 1/2 of Onions, cook for another 5 minutes.
Add Red Chili pepper, Chipotle Hot Sauce, Cumin, Salt, Pepper,
Chicken Broth, Diced Tomatoes, Beer and 1/2 Cilantro
Simmer covered for 2 hours.
While Chili is simmering, Grill Poblano Peppers, let cool - Peel skin and dice.
At 2 hours, add diced Poblano peppers
and second half of Onions and Cilantro.
Simmer for another 30 minutes.
